Fresh Fruit Tart

This easy dessert is quick to make and is a healthier option for a weeknight treat. Inspired by Sally’s recipe.

Crust:
2 cups roughly-ground cashews
15 dates, soaked for 10 minutes

Blend the dates and together until combined. This probably works best in a food processor, but I only had a hand blender. Press the crust into a pie tin. I lined mine with parchment to prevent sticking.

Filling:
1-2 cups of plain Greek yogurt (or flavoured, if you wish)

Garnish with fresh fruit. I chose tinned orange segments, kiwi, and strawberries.
