After falling in love with the beautiful pin, I tested out Lovely Little Kitchen’s recipe, but made a few modifications as I found the oil and sugar amounts too high for my taste. Delicious!
2 cups flour
3/4 cup oats
1/4 tsp. salt
2 tsp. cinnamon
2 tsp. baking powder
3/4 cup sugar
1/2 cup + 1 tbsp. oil
2 eggs, beaten
1/3 cup Greek yogurt
1 cup applesauce- I used chunky sauce for a nice texture
1 tsp. vanilla
For the Glaze
1/2 cup icing sugar
2 tbsp. applesauce
Preheat oven to 350F and grease loaf pan.
In a large bowl combine flour, oats, salt, cinnamon, and baking powder.
In a separate bowl mix sugar, oil, eggs, yogurt, applesauce, and vanilla.
Mix wet and dry ingredients until just combined.
Bake for 50-60 minutes, or until a toothpick inserted into the centre comes out clean.
Whisk together the icing sugar and applesauce, and glaze the cake when it is slightly cool.
